The proposal form lets me pick poster, paper, or "either." I'm a doctoral student. Is a poster seen as less prestigious? Which gets better feedback?

Honestly, I've had much better conversations at posters. People come to you specifically interested in your work, and you get 1:1 feedback.
For your CV they both count as refereed presentations. I'd pick "either" — it can improve your chances of acceptance.
Paper sessions are good practice for job talks though. If you're going on the market soon, the paper format is worth it.
